Coat meat or fish with Jerk Seasoning before barbecuing, to create the most delicious flavour and irresistible aroma.

Allspice
Cane Vinegar
Citric Acid
Spicy Butter & Herb Roasted Cornish Hen (Poussin)
4 whole poussin
2 oz Busha Browne Jerk Seasoning
2 tbs butter/ olive oil
juice of 1 lemon
1 tbs fresh basil
1 tbs fresh thyme leaves
Wash the poussin with lemon juice. Combine the jerk seasoning, butter and fresh herbs together in a bowl to form a paste. Rub inside and out of each bird. Place in a pre-heated oven and roast at 375ºF for ½ hour, or until done and the juices run clear. Serve with a garlic mashed potato and fresh salad.
